This is a Greek version of the classic cheese cake recipe.
For the crust:
150 gr. Cretan barley rusk
2 tbs honey
1tsp ground cinnamon (optional)
For the cheese filling:
180 gr. anthotyro cheese(traditional soft cheese , low in sodium, fat and cholesterol).
150 gr. Greek yogurt 2%
3 tbs stevia powder
1 tsp lemon juice
Honey with nuts or
Marmalade without sugar or
Fresh fruits in small pieces or
Crushed dark chocolate
Greek spoon sweets ( fruits or vegetable preserved in syrup that are served on spoons)
In a blender stir together the crust ingredients till fully combined.
Divide between 4 small bowls or glasses. Press down firmly as to have a flat crust.
Go on with the cheese filling by beating together the anthotyro cheese with the yogurt, the stevia powder and the lemon juice till creamy.
Pour the filling evenly among the bowls or glasses over the crust.
Choose a topping and garnish!!
