Breakfast is the most important meal of the day! I never skip it because it wakes me up and keeps me going through the day. I love granola. I prefer homemade to store bought. It is perfect with milk of choice or as a topping on yogurt or even ice cream. The ideal way to start off your day! Almond granola: oats, almonds, coconut chips coated with banana, almond butter and coconut oil and topped with chocolate chips! This is heaven!

Ingredients (for 1.5 jar):
2 cup oats
3/4 cup almonds, coarsely chopped
1/2 cup coconut chips
1/3 cup flaxseed
30 gr. chocolate, chopped
1 banana
5 Tbsp coconut oil
2 Tbsp almond butter
5 Tbsp agave or maple syrup or honey (for non vegan)
Instructions:
In a blender pulse banana, oil, butter and sweetener of choice until creamy. In a baking sheet lined with parchment paper put oats, almonds, coconut chips and flaxseed. Pour wet mixture over the oats and mix with your hands until well coated. Bake in preheated oven at 180C for about 25 minutes until golden brown. While baking, mix with a spoon or it might get burnt. When ready, remove from oven and allow to cool. Then top with chocolate. Store in airtight jars. Enjoy!
