Classic, delicious Greek cookies with a distinctive aftertaste of grape molasses, cinnamon and clove. Easy to make easy to bake! Perfect with your morning or afternoon coffee, or better yet, with a glass of warm milk! Oh, so perfect!

 

 

Serves: 30-35 cookies Preparation time: 20′ Cooks in: 20′ Ready in: 40′

 

 

Ingredients

610gr all purpose flour
1 tsp baking powder
1 tsp baking soda
1 tsp baking ammonia
1 tsp cinnamon powder
1 tsp ground cloves
200ml extra-virgin olive oil
200gr sugar
200ml petimezi (grape molasses of good quality)
1/3 cup water
90ml brandy
1 tbsp fresh lemon juice

 Method

Step 1
Preheat oven at 170C and line a shallow baking dish with baking parchment.

Step 2
In a large bowl mix all ingredients except flour, until well combined. Add flour and mix with hands or in stand mixer until you get a nice dough.

Step 3
Take a little knob of dough at a time, about the size of a large walnut and shape it into a thin rope and then into a circle, pressing the edges together, or any other shape.

Step 4
Bake for about 15-20 minutes or until lightly crisp. Make sure NOT to over bake. Cool on racks and store in a cool, dry place.
